Ingredients

- 3 medium cucumbers
- 4 ounces feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Wash and trim the ends of the cucumbers.
- Use a vegetable peeler to create thin ribbons from the cucumbers, stopping when you reach the seedy center. Discard the centers.
- Place the cucumber ribbons in a large bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, pepper, and salt to make the dressing.
- Pour the dressing over the cucumber ribbons.
- Gently toss the ribbons to coat them evenly with the dressing.
- Add the crumbled feta cheese and toss lightly one more time.
- Serve immediately or chill for 15 minutes before serving.
Notes
- You can substitute lemon juice for red wine vinegar for a brighter flavor.
- For extra texture, add 1/4 cup of toasted pine nuts.
