Ingredients

  • 1 cup cucumber, chopped
  • 1 inch fresh ginger, peeled and sliced
  • 10 mint leaves
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sugar or sweetener (optional)
  • 1 cup sparkling water or club soda
  • Ice cubes

Instructions

  1. Place the chopped cucumber, sliced ginger, mint leaves, lime juice, and sugar (if using) into a blender or food processor.
  2. Blend until the mixture is smooth.
  3. Pour the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the liquid. Discard the solids.
  4. Fill two glasses with ice cubes.
  5. Divide the cucumber-ginger-mint liquid evenly between the two glasses.
  6. Top each glass with sparkling water or club soda.
  7. Stir gently and serve immediately.

Notes

  • For a stronger ginger flavor, increase the ginger amount to 1.5 inches.
