Description

A simple, low-carb pie made with ground meat and taco seasoning, baked without a crust.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup chopped onion

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9-inch pie plate.
  2. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  3. Stir in the taco seasoning mix and water. Simmer for 5 minutes, stirring occasionally. Remove from heat.
  4. In a separate bowl, beat the eggs lightly. Mix in the softened cream cheese, sour cream, and half of the shredded cheddar cheese until smooth.
  5. Stir the cooked meat mixture and chopped onion into the egg and cheese mixture.
  6. Pour the mixture into the prepared pie plate. Sprinkle the remaining cheddar cheese over the top.
  7. Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden brown.
  8. Let the pie cool for 10 minutes before slicing and serving.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • Add 1/2 cup of drained canned black beans with the meat mixture for extra texture.
