Description

A quick and easy chicken recipe coated in crushed potato chips for a crispy weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup crushed potato chips (any flavor)
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breasts into 1-inch pieces.
  3. In a shallow dish, combine flour and a pinch of salt and pepper.
  4. In another shallow dish, place the beaten egg.
  5. In a third shallow dish, place the crushed potato chips.
  6. Dredge each chicken piece in flour, then dip in egg, and finally coat with crushed potato chips.
  7. Heat olive oil in an oven-safe skillet over medium-high heat.
  8. Sear chicken pieces for 1-2 minutes per side until lightly browned.
  9. Transfer skillet to the preheated oven and bake for 10-12 minutes, or until chicken is cooked through.
