Ingredients

- 2 cups shredded carrots
- 1 cup thinly sliced Granny Smith apples
- 1/2 cup chopped celery
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded carrots, sliced apples, chopped celery, walnuts, and dried cranberries.
- In a small bowl, whisk together mayonnaise, apple cider vinegar, and honey.
- Pour the dressing over the salad ingredients.
- Toss gently to coat everything evenly.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving to allow flavors to meld.
Notes
- For extra crunch, add sunflower seeds.
- Adjust sweetness by adding more or less honey.
