Easy and delicious lasagna made in a slow cooker.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, uncooked
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion and garlic to the skillet and cook until softened.
  3. Stir in crushed tomatoes, tomato sauce, tomato paste, basil, oregano, salt, and pepper. Bring to a simmer.
  4. In a bowl, combine ricotta cheese, egg, and Parmesan cheese.
  5. Spread a thin layer of meat sauce in the bottom of a 6-quart slow cooker.
  6. Layer with 3 lasagna noodles (breaking to fit), half of the ricotta mixture, and 1/3 of the mozzarella cheese.
  7. Repeat layers. Top with remaining noodles, sauce, and mozzarella cheese.
  8. Cover and cook on low for 4-6 hours, or until noodles are tender.
  9. Let stand for 15 minutes before serving.

Notes

  • You can use no-boil lasagna noodles if preferred. Adjust cooking time as needed.
  • For a richer flavor, add a splash of red wine to the meat sauce.
