- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 4 cups chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro for garnish
- Tortilla strips for topping
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add onion, garlic, bell pepper, black beans, corn, and diced tomatoes.
- Pour in chicken broth and add chili powder, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred with forks. Return to the crockpot.
- Stir in lime juice before serving.
- Garnish with fresh cilantro and tortilla strips.
Notes
- For extra spice, add chopped jalapeños.
- Use rotisserie chicken for a quicker version.
- Store leftovers in an airtight container for up to 3 days.
