- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried Italian herbs
- Salt and black pepper to taste
- 2 large eggs, beaten
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the Parmesan cheese, panko breadcrumbs, flour, garlic powder, Italian herbs, salt, and pepper.
- In another shallow dish, whisk the eggs.
- Dip each zucchini slice in the beaten egg, allowing excess to drip off.
- Coat the zucchini slice in the Parmesan mixture, pressing gently to adhere.
- Place the coated zucchini slices in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
- Serve warm.

- Ensure zucchini slices are uniform in thickness for even cooking.
- Do not overcrowd the baking sheet. Bake in batches if necessary.
