  • 1 pound large shrimp, peeled and deveined
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a shallow dish, combine panko breadcrumbs, salt, and pepper.
  3. In another shallow dish, place the flour.
  4. In a third shallow dish, place the beaten eggs.
  5. Dredge each shrimp first in flour, then dip in the beaten eggs, and finally coat thoroughly with the panko mixture.
  6. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
  7. Carefully add the breaded shrimp to the hot oil in a single layer, working in batches if necessary to avoid overcrowding.
  8. Fry for 2-3 minutes per side, until golden brown and crispy.
  9. Remove the shrimp with a slotted spoon and place on a wire rack set over a baking sheet to drain any excess oil.
  10. Serve immediately.
