Instructions
- Wash and trim the ends of the eggplant.
- Make cuts about 1/4 inch apart along the length of the eggplant, stopping about 1/2 inch from the bottom to create a fanned effect.
- In a bowl, whisk together the flour, baking powder, salt, and pepper.
- Gradually whisk in the cold water until you have a smooth batter.
- Heat about 2 inches of vegetable oil in a deep pan or pot over medium-high heat.
- Dip each fanned eggplant into the batter, ensuring it is fully coated.
- Carefully place the battered eggplant into the hot oil, fanning it out slightly.
- Fry for 3-5 minutes per side, or until golden brown and crispy.
- Remove the eggplant from the oil and place it on a wire rack or paper towels to drain.
- Season with salt and pepper if desired.

- Ensure the oil is hot enough before frying for maximum crispiness.
- Do not overcrowd the pan when frying.
- Eggplant can be prepped a few hours in advance and kept in water to prevent browning.
