- 1 pound white fish fillets (like cod, tilapia, or haddock)
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 large eggs
- 2 tablespoons milk
- Vegetable oil for frying
Instructions
- Pat the fish fillets dry with paper towels.
- In a shallow dish, combine cornmeal, flour, salt, pepper, and paprika.
- In another shallow dish, whisk together eggs and milk.
- Dip each fish fillet first into the egg mixture, then dredge it in the cornmeal mixture, ensuring it is fully coated.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Carefully place the coated fish fillets into the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
- Fry for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fish from the skillet and place on a wire rack set over a baking sheet to drain excess oil.
- Serve immediately.
Notes
- For extra crispiness, you can double-coat the fish by dipping it in the egg mixture and cornmeal mixture a second time.
- Adjust the seasoning to your preference by adding other spices like garlic powder or cayenne pepper to the cornmeal mixture.
- Serve with lemon wedges and your favorite tartar sauce.
