Ingredients

- 1 whole chicken (about 3–4 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
Instructions
- Preheat your oven to 400°F (200°C).
- Remove giblets from the chicken and pat the chicken dry with paper towels.
- In a small bowl, mix together olive oil, salt, pepper, paprika, garlic powder, onion powder, thyme, and rosemary.
- Rub the mixture all over the chicken, ensuring it is evenly coated.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest for 10 minutes before carving.
Notes
- For extra crispy skin, you can increase the oven temperature to 425°F (220°C) for the last 15-20 minutes of cooking.
- You can add lemon wedges or herb sprigs inside the cavity for added flavor.
