- 1 pound spaghetti
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chopped fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Cook spaghetti according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While spaghetti cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Stir in chopped spinach and sun-dried tomatoes. Cook until spinach wilts, about 2-3 minutes.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and the sauce is smooth.
- Add the drained spaghetti to the skillet. Toss to coat evenly with the sauce.
- If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.
- Season with salt and black pepper to taste.
- Serve immediately.
Notes
- For a richer flavor, you can add a pinch of red pepper flakes with the garlic.
- Garnish with fresh basil or parsley before serving.
- To make this dish vegetarian, ensure your Parmesan cheese is vegetarian-friendly.
