  • Salt and black pepper to taste

Instructions

  1. Cook spaghetti according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While spaghetti cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Stir in chopped spinach and sun-dried tomatoes. Cook until spinach wilts, about 2-3 minutes.
  5. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
  6. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Add the drained spaghetti to the skillet. Toss to coat evenly with the sauce.
