Creamy Shrimp Scampi Pasta

Description

A rich and creamy pasta dish featuring tender shrimp in a garlic butter sauce.


Ingredients

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  4. Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  5. Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, or until the sauce has slightly thickened.
  6. Stir in Parmesan cheese and parsley. Season with salt and pepper to taste.
  7. Return the cooked shrimp to the skillet and toss to coat in the sauce.
  8. Add the drained linguine to the skillet and toss to combine with the shrimp and sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  9. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • You can substitute other pasta shapes like fettuccine or spaghetti.
