Description
A simple recipe for rich, creamy pasta with salmon.

- 1 pound fettuccine pasta
- 1 pound salmon fillets, skin removed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook fettuccine according to package directions. Drain and set aside.
- Season salmon fillets with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add salmon and cook for 4-5 minutes per side until cooked through. Remove salmon and flake into large pieces.
- Add minced garlic to the same skillet and cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a gentle simmer, stirring constantly.
- Reduce heat to low. Stir in Parmesan cheese until the sauce is smooth. Do not boil.
- Add the cooked pasta and flaked salmon to the skillet. Toss gently to coat everything in the sauce.
- Stir in chopped parsley. Taste and adjust seasoning with salt and pepper if needed.
- Serve immediately.
Notes
- You can substitute shrimp or chicken for salmon.
- For a lighter sauce, use half-and-half instead of heavy cream, but the sauce will be thinner.
