A comforting and creamy potato soup, perfect for a cold day.


Ingredients

Scale
  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 4 cups potatoes, peeled and diced
  • 1 cup milk or cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, bacon bits, chives

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Mash some of the potatoes against the side of the pot to thicken the soup, or use an immersion blender to blend to desired consistency.
  6. Stir in milk or cream. Heat gently, but do not boil.
  7. Season with salt and pepper to taste.
  8. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, use less broth or simmer longer.
  • For a smoother soup, blend completely with an immersion blender or in a regular blender (in batches).
  • Soup can be made ahead and reheated. Add more liquid if needed when reheating.
