Ingredients

  • 1 pound penne pasta
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup vodka
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Cook penne according to package directions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and red pepper flakes and cook for 1 minute more.
  4. Pour in crushed tomatoes and bring to a simmer.
  5. Add vodka and cook, stirring occasionally, until the alcohol has cooked off, about 5-7 minutes.
  6. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  7. Add cooked penne to the sauce and toss to coat.
  8. Serve immediately, garnished with fresh basil.
