- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup fresh spinach, chopped
- 1/2 cup grated parmesan cheese
- 1/4 cup heavy cream
- 2 boneless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the rice under cold water and drain.
- In a pot, bring chicken broth to a boil, add rice, reduce heat, cover, and cook for 15 minutes.
- Stir in spinach, parmesan, and heavy cream until well combined.
- Season chicken with salt and black pepper.
- Heat olive oil in a pan, cook chicken until golden brown and fully cooked.
- Add garlic and red pepper flakes to the pan, sauté for 1 minute, then toss with chicken.
- Serve the creamy parmesan spinach rice with the spicy garlic chicken on top.
