Description
A rich and simple pasta dish featuring fresh lobster in a creamy sauce.

- 1 lb spaghettini
- 1 lb cooked lobster meat, chopped
- 4 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghettini according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
- While pasta cooks, melt butter in a large skillet over medium heat.
- Add minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
- Pour in white wine and let it simmer for 2 minutes, reducing slightly.
- Stir in heavy cream and bring to a gentle simmer. Cook for 3 minutes until the sauce thickens slightly.
- Add the chopped lobster meat to the sauce. Heat through for 1 minute.
- Add the drained spaghettini to the skillet with the sauce. Toss to coat.
- Stir in the Parmesan cheese and a splash of the reserved pasta water if the sauce seems too thick.
- Season with salt and pepper to your taste.
- Serve immediately, garnished with fresh parsley.

- Use fresh, high-quality lobster for the best flavor.
- If you do not have white wine, use chicken broth instead.
- Adjust the amount of pasta water to reach your preferred sauce consistency.
