Ingredients

- 1 cup raw cashews, soaked for at least 4 hours or overnight
- 1/2 cup water, plus more as needed
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- 1 tablespoon Dijon mustard
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
Instructions
- Drain the soaked cashews and rinse them thoroughly.
- Place the drained cashews in a high-speed blender.
- Add the water, lemon juice, minced garlic, nutritional yeast, Dijon mustard, salt, and pepper to the blender.
- Blend on high speed until the mixture is completely smooth and creamy. You may need to scrape down the sides of the blender a few times.
- If the dressing is too thick, add more water, one tablespoon at a time, until you reach your desired consistency.
- Taste and adjust seasoning with salt and pepper if needed.
- Transfer the dressing to an airtight container and refrigerate until ready to use.
Notes
- For a quicker soak, cover cashews with boiling water and let them sit for 1 hour.
- This dressing will thicken as it chills. Add a splash of water before serving if needed.
- Store in the refrigerator for up to 5 days.
