  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups sliced mushrooms (cremini or button)
  • ½ cup dry white wine
  • 45 cups vegetable or chicken broth, warmed
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream (optional for extra creaminess)
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Warm the broth in a saucepan and keep it on low heat while preparing the risotto.
  2. In a large skillet or saucepan, heat olive oil and 1 tbsp butter over medium heat.
  3. Add chopped onion and cook until soft and translucent, about 3–4 minutes.
  4. Add garlic and mushrooms, sautéing until mushrooms are browned and their moisture has evaporated, about 6–8 minutes.
  5. Stir in Arborio rice and cook for 1–2 minutes to toast slightly.
  6. Pour in the white wine and stir until it is fully absorbed by the rice.
  7. Begin adding warm broth one ladle at a time, stirring constantly and allowing each addition to absorb before adding the next.
  8. Continue this process for about 20–25 minutes, until the rice is creamy and al dente.
  9. Stir in the remaining 1 tbsp butter, Parmesan cheese, and heavy cream if using. Season with salt and pepper.
  10. Remove from heat, garnish with fresh parsley, and serve warm.
