- 1½ cups Arborio rice
- 1 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups sliced mushrooms (cremini or button)
- ½ cup dry white wine
- 4–5 cups vegetable or chicken broth, warmed
- ½ cup grated Parmesan cheese
- ¼ cup heavy cream (optional for extra creaminess)
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Warm the broth in a saucepan and keep it on low heat while preparing the risotto.
- In a large skillet or saucepan, heat olive oil and 1 tbsp butter over medium heat.
- Add chopped onion and cook until soft and translucent, about 3–4 minutes.
- Add garlic and mushrooms, sautéing until mushrooms are browned and their moisture has evaporated, about 6–8 minutes.
- Stir in Arborio rice and cook for 1–2 minutes to toast slightly.
- Pour in the white wine and stir until it is fully absorbed by the rice.
- Begin adding warm broth one ladle at a time, stirring constantly and allowing each addition to absorb before adding the next.
- Continue this process for about 20–25 minutes, until the rice is creamy and al dente.
- Stir in the remaining 1 tbsp butter, Parmesan cheese, and heavy cream if using. Season with salt and pepper.
- Remove from heat, garnish with fresh parsley, and serve warm.
Notes
- Use Arborio rice for the best creamy texture.
- Don’t rinse the rice—its starch is what makes risotto creamy.
- Stir frequently to prevent sticking and ensure even cooking.
- Add broth gradually for the perfect consistency.
