Description
A simple and flavorful pasta dish featuring roasted cauliflower in a rich garlic butter sauce.
Ingredients
Scale
- 1 pound pasta
- 1 head cauliflower, cut into florets
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Toss cauliflower florets with a drizzle of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
- While the cauliflower roasts, cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
- Add the cooked pasta and roasted cauliflower to the skillet. Toss to coat everything in the sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the garlic butter sauce.
- Feel free to add other vegetables like broccoli or bell peppers along with the cauliflower.
