- 4 slices bacon
- 2 large chicken breasts (cut in half horizontally into cutlets)
- 8 oz cremini or white mushrooms, sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp flour
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 tsp Dijon mustard (optional)
- Salt and black pepper to taste
- 2 tbsp butter
- 1 tbsp olive oil
- 12 oz egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, cook bacon until crispy (6–8 minutes). Remove and set aside. Leave 1–2 tbsp of bacon fat in the pan.
- Season chicken cutlets with salt and pepper. Add olive oil to the pan if needed and sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Add butter to the same skillet. Sauté chopped onion for 2–3 minutes, then add garlic and mushrooms. Cook until mushrooms are browned and tender (6–8 minutes).
- Sprinkle flour over the mushrooms and stir. Cook for 1 minute to eliminate raw flour taste.
- Slowly add chicken broth while stirring to deglaze the pan. Stir in heavy cream and Dijon mustard. Let the sauce simmer for 4–5 minutes until slightly thickened.
- Cook egg noodles according to package directions. Drain and set aside.
- Slice the chicken or return whole pieces to the sauce. Let them simmer for 2–3 minutes. Crumble bacon on top and stir in chopped parsley.
- Serve over egg noodles and enjoy while warm.
