  • 3 medium sweet potatoes, peeled and thinly sliced
  • 1 cup full-fat coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup nutritional yeast (optional, for cheesy flavor)
  • 1 tablespoon tapioca starch or arrowroot powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×9 inch baking dish.
  2. In a medium bowl, whisk together the coconut milk, chicken broth, nutritional yeast (if using), tapioca starch, thyme, and garlic powder. Season with salt and pepper.
  3. Arrange half of the sliced sweet potatoes in an even layer in the bottom of the prepared baking dish.
  4. Spread the shredded chicken evenly over the layer of sweet potatoes.
  5. Pour half of the liquid mixture over the chicken layer.
  6. Top with the remaining sweet potato slices.
  7. Pour the remaining liquid mixture evenly over the top layer of potatoes.
  8. Cover the baking dish tightly with foil.
  9. Bake for 40 minutes.
  10. Remove the foil and bake for an additional 10 to 15 minutes, or until the potatoes are tender when pierced with a fork and the top is slightly browned.
  11. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.

  • If you prefer a thicker sauce without nutritional yeast, increase the arrowroot powder to 1.5 tablespoons.
