- 2 cups cooked, shredded chicken breast
- 3 medium sweet potatoes, peeled and thinly sliced
- 1 cup full-fat coconut milk
- 1/2 cup chicken broth
- 1/4 cup nutritional yeast (optional, for cheesy flavor)
- 1 tablespoon tapioca starch or arrowroot powder
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×9 inch baking dish.
- In a medium bowl, whisk together the coconut milk, chicken broth, nutritional yeast (if using), tapioca starch, thyme, and garlic powder. Season with salt and pepper.
- Arrange half of the sliced sweet potatoes in an even layer in the bottom of the prepared baking dish.
- Spread the shredded chicken evenly over the layer of sweet potatoes.
- Pour half of the liquid mixture over the chicken layer.
- Top with the remaining sweet potato slices.
- Pour the remaining liquid mixture evenly over the top layer of potatoes.
- Cover the baking dish tightly with foil.
- Bake for 40 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes, or until the potatoes are tender when pierced with a fork and the top is slightly browned.
- Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
- If you prefer a thicker sauce without nutritional yeast, increase the arrowroot powder to 1.5 tablespoons.
- Ensure your sweet potatoes are sliced uniformly thin for even cooking.
- You can substitute regular white potatoes if you are not strictly following the Whole30 program, but sweet potatoes maintain the Paleo structure better.
