- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 12 ounces potato gnocchi
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces, salt, and pepper. Cook until browned on all sides. Remove chicken from the pot and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream, Parmesan cheese, thyme, and rosemary.
- Add the gnocchi and return the chicken to the pot.
- Bring to a gentle boil and cook according to gnocchi package directions, usually 3-5 minutes, until they float to the surface.
- Stir in spinach and cook until wilted, about 1-2 minutes.
Notes
- For a thicker sauce, you can simmer the soup for a few extra minutes before adding the gnocchi.
- Feel free to add other vegetables like carrots or celery along with the onion.
- Garnish with extra Parmesan cheese and fresh parsley if desired.
