- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (penne, rotini, or farfalle work well)
- 4 slices bacon, chopped
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup fresh or frozen corn kernels
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add chopped bacon to the same skillet and cook until crispy. Remove bacon with a slotted spoon, leaving drippings in the skillet. Set bacon aside.
- Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in corn kernels and cook for 2-3 minutes.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until slightly thickened.
- Stir in grated Parmesan cheese until melted and the sauce is smooth.
- Return the cooked chicken to the skillet. Add the cooked pasta and toss to combine and coat everything with the sauce.
- Season with salt and pepper to taste.
- Serve immediately, garnished with chopped bacon and fresh parsley if desired.
Notes
- For a lighter sauce, you can use half-and-half instead of heavy cream, but the sauce may be thinner.
- Add a pinch of red pepper flakes for a touch of heat.
- Feel free to add other vegetables like peas or spinach.
