Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (penne, rotini, or farfalle work well)
  • 4 slices bacon, chopped
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen corn kernels
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add chopped bacon to the same skillet and cook until crispy. Remove bacon with a slotted spoon, leaving drippings in the skillet. Set bacon aside.
  4. Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in corn kernels and cook for 2-3 minutes.
  6. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  7. Stir in grated Parmesan cheese until melted and the sauce is smooth.
  8. Return the cooked chicken to the skillet. Add the cooked pasta and toss to combine and coat everything with the sauce.
  9. Season with salt and pepper to taste.
  10. Serve immediately, garnished with chopped bacon and fresh parsley if desired.

Notes

  • For a lighter sauce, you can use half-and-half instead of heavy cream, but the sauce may be thinner.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Feel free to add other vegetables like peas or spinach.
