- 2 tablespoons butter
- 1 cup sliced mushrooms
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 cups cooked, chopped chicken
- 1/4 cup pimento, drained and chopped
- 2 tablespoons chopped fresh parsley
Instructions
- Melt butter in a large skillet over medium heat.
- Add mushrooms, green bell pepper, and onion. Cook until softened, about 5-7 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in chicken broth and milk. Bring to a simmer, stirring constantly.
- Stir in salt, pepper, and paprika.
- Add cooked chicken and pimento. Heat through, about 5 minutes.
- Stir in parsley just before serving.
Notes
- Serve over toast, biscuits, or puff pastry shells.
- For a richer flavor, use half-and-half instead of milk.
- Add other vegetables like peas or carrots if desired.
