Description

A rich and flavorful pasta dish featuring tender shrimp in a creamy Cajun-spiced sauce.


Ingredients

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, heavy cream, Parmesan cheese, Cajun seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally, until sauce thickens slightly.
  6. Return shrimp to the skillet and stir to coat with sauce.
  7. Add cooked linguine to the skillet and toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • You can substitute chicken or sausage for shrimp.
  • Adjust Cajun seasoning to your spice preference.
