A rich and flavorful pasta dish featuring tender shrimp in a creamy Cajun-spiced sauce.

- 1 pound linguine
- 2 tablespoons olive oil
- 1 pound large shrimp, peeled and deveined
- 1 onion, chopped
- 2 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, heavy cream, Parmesan cheese, Cajun seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally, until sauce thickens slightly.
- Return shrimp to the skillet and stir to coat with sauce.
- Add cooked linguine to the skillet and toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve immediately, garnished with fresh parsley.
Notes
- For extra spice, add a pinch of cayenne pepper.
- You can substitute chicken or sausage for shrimp.
- Adjust Cajun seasoning to your spice preference.
