Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Brown ground beef in a large pot over medium-high heat. Drain excess fat.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato sauce, beef broth, basil, oregano, and red pepper flakes. Bring to a simmer.
  4. Season with salt and pepper.
  5. Break lasagna noodles into bite-sized pieces and add to the soup. Cook according to package directions, stirring occasionally to prevent sticking.
  6. Once noodles are cooked, stir in heavy cream and Parmesan cheese. Cook until heated through and slightly thickened.
  7. Ladle soup into bowls and garnish with fresh parsley.
