Ingredients

- 3–4 lb beef roast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup cranberry sauce
- 1/4 cup balsamic vinegar
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C).
- Rub the beef roast with olive oil, salt, and pepper.
- Place the roast in a roasting pan.
- In a small bowl, whisk together cranberry sauce, balsamic vinegar, brown sugar, and Dijon mustard.
- Spread half of the glaze over the roast.
- Roast for 1 hour.
- Baste the roast with the remaining glaze.
- Continue roasting until the desired internal temperature is reached (130-135°F for medium-rare).
- Let the roast rest for 10-15 minutes before slicing.
Notes
- For a deeper flavor, marinate the roast in the glaze for at least 30 minutes before cooking.
- Serve with roasted vegetables or mashed potatoes.
