Ingredients

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup cranberry sauce
  • 1/4 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub the beef roast with olive oil, salt, and pepper.
  3. Place the roast in a roasting pan.
  4. In a small bowl, whisk together cranberry sauce, balsamic vinegar, brown sugar, and Dijon mustard.
  5. Spread half of the glaze over the roast.
  6. Roast for 1 hour.
  7. Baste the roast with the remaining glaze.
  8. Continue roasting until the desired internal temperature is reached (130-135°F for medium-rare).
  9. Let the roast rest for 10-15 minutes before slicing.
