- 1 pound Italian sausage
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 (15 ounce) can diced tomatoes
- 1 cup small pasta (such as ditalini or elbow)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, brown the Italian sausage over medium heat. Drain excess fat.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the pasta and cook according to package directions until al dente.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley.
Notes
- You can use hot or mild Italian sausage depending on your preference.
- Add other vegetables like zucchini, spinach, or kale for extra nutrition.
