Ingredients

  • 1 pound rotini pasta
  • 1 cup chopped bell pepper
  • 1 cup chopped red onion
  • 1 cup chopped celery
  • 1 cup chopped black olives
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1/2 cup chopped pickled jalapenos
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, bell pepper, red onion, celery, black olives, corn, black beans, jalapenos, and cilantro.
  3. In a separate bowl, whisk together mayonnaise, sour cream, milk, lime juice, chili powder, cumin, salt, and pepper.
  4. Pour dressing over pasta mixture and toss to coat.
  5. Chill for at least 30 minutes before serving.

Notes

  • You can add cooked and crumbled bacon for extra flavor.
  • Adjust the amount of jalapenos to your spice preference.
