Hearty pasta salad with a kick, perfect for picnics and potlucks.
Ingredients

- 1 pound rotini pasta
- 1 cup chopped bell pepper
- 1 cup chopped red onion
- 1 cup chopped celery
- 1 cup chopped black olives
- 1 cup corn kernels
- 1 cup black beans, rinsed and drained
- 1/2 cup chopped pickled jalapenos
- 1/2 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup milk
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pasta, bell pepper, red onion, celery, black olives, corn, black beans, jalapenos, and cilantro.
- In a separate bowl, whisk together mayonnaise, sour cream, milk, lime juice, chili powder, cumin, salt, and pepper.
- Pour dressing over pasta mixture and toss to coat.
- Chill for at least 30 minutes before serving.
Notes
- You can add cooked and crumbled bacon for extra flavor.
- Adjust the amount of jalapenos to your spice preference.
- This salad can be made ahead of time.
