Ingredients

- 8 oz rotini pasta
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1/4 cup cilantro, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/2 cup barbecue sauce
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, black beans, cherry tomatoes, corn, red onion, bell pepper, and cilantro.
- In a small bowl, mix ranch dressing, barbecue sauce, chili powder, and garlic powder.
- Pour the dressing over the pasta mixture and toss to coat.
- Stir in shredded cheddar cheese.
- Season with salt and pepper.
- Chill for at least 30 minutes before serving.
Notes
- For extra protein, add cooked chicken or beef.
- Adjust the dressing to your preferred consistency.
- Best served chilled.
