Ingredients

- 1.5 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1/4 cup chopped onion
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs potatoes, peeled and sliced
- 1/4 cup butter
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, salt, and pepper. Mix well.
- Press the meatloaf mixture evenly into the bottom of a 9×13 inch baking dish.
- In a separate bowl, toss the sliced potatoes with butter, milk, salt, and pepper.
- Arrange the seasoned potatoes evenly over the meatloaf mixture.
- Cover the dish with foil.
- Bake for 1 hour, or until potatoes are tender and meatloaf is cooked through.
- Remove foil and bake for an additional 10-15 minutes to brown the potatoes.
- Let stand for 5 minutes before serving.
Notes
- For a richer flavor, you can add a tablespoon of Worcestershire sauce to the meatloaf mixture.
- A sprinkle of shredded cheese on top during the last 10 minutes of baking is also delicious.
