- 1 can (15 ounces) corn, drained
- 1/2 cup chopped red onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 small tortillas
Instructions
- In a large bowl, combine black beans, corn, red onion, green bell pepper, red bell pepper, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
- Pour the dressing over the bean mixture and toss to combine.
- Warm the tortillas according to package directions.
- Fill each tortilla with the cowboy caviar mixture.
- Serve immediately.
