Ingredients

- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) pinto beans, rinsed and drained
- 1 can (15 ounces) whole kernel corn, drained
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 1 head butter lettuce, leaves separated
Instructions
- In a large bowl, combine black beans, pinto beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, chili powder, and cumin.
- Pour the dressing over the bean and vegetable mixture.
- Stir gently to combine.
- Season with salt and black pepper to taste.
- Spoon the cowboy caviar mixture into individual lettuce cups.
- Serve immediately.
Notes
- You can add other vegetables like diced avocado or tomatoes.
- Adjust the chili powder and cumin to your spice preference.
- This dish is also great served with tortilla chips.
