  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1 head butter lettuce, leaves separated

Instructions

  1. In a large bowl, combine black beans, pinto beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, chili powder, and cumin.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Stir gently to combine.
  5. Season with salt and black pepper to taste.
  6. Spoon the cowboy caviar mixture into individual lettuce cups.
  7. Serve immediately.
