  • 1/4 cup packed brown sugar
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup cold unsalted butter, cut into pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate small bowl, stir together the cottage cheese and milk until mostly smooth.
  6. Add the cottage cheese mixture and the dry ingredients alternately to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.

  8. For the crumble topping, combine the flour, brown sugar, and pecans (if using) in a small bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
