Description

Simple, no-bake hand pies filled with a creamy spinach and artichoke mixture.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 4 tablespoons cold unsalted butter, cubed
  • 2 tablespoons ice water
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1/4 teaspoon garlic powder
  • Pinch of black pepper

Instructions

  1. In a bowl, combine the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Add the ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  3. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. While the dough chills, prepare the filling. In a separate bowl, mix the softened cream cheese, mayonnaise, Parmesan cheese, garlic powder, and pepper.
  5. Fold in the dried spinach and chopped artichoke hearts until evenly combined.
  6. Preheat your oven to 400 degrees Fahrenheit.
  7. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
  8. Use a round cookie cutter (about 4 inches in diameter) to cut out circles from the dough.
  9. Place a spoonful of the filling onto one half of each dough circle.
  10. Fold the other half of the dough over the filling to create a half-moon shape. Crimp the edges with a fork to seal.
  11. Place the pies on a baking sheet lined with parchment paper.
  12. Bake for 15 to 18 minutes, or until the crusts are lightly golden brown.
  13. Let the hand pies cool completely before serving.
