- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons instant coffee granules dissolved in 1 tablespoon hot water
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the dissolved coffee.
- Drop rounded tablespoons of dough onto the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are golden brown.
- Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can adjust the amount of instant coffee to your preference.
- For a stronger coffee flavor, use espresso powder instead of instant coffee granules.
- Store cookies in an airtight container at room temperature for up to 5 days.
