Ingredients

  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

Instructions

  1. Combine oats, coconut, almond butter, honey or maple syrup, lime juice, lime zest, and salt in a medium bowl.
  2. Mix all ingredients thoroughly until a uniform dough forms.
  3. Chill the mixture in the refrigerator for 15 minutes to firm up slightly.
  4. Roll the mixture into small, bite-sized balls, about 1 inch in diameter.
  5. Roll the finished balls in extra shredded coconut, if desired.
  6. Store the energy balls in an airtight container in the refrigerator.

Notes

  • If the mixture seems too dry, add one teaspoon of water or more lime juice at a time until it holds together.
  • For a sweeter taste, increase the honey or maple syrup by one tablespoon.
