A simple, refreshing smoothie mimicking the flavors of key lime pie with coconut.
Ingredients

- 1 cup frozen pineapple chunks
- 1/2 cup unsweetened coconut milk
- 1/4 cup plain Greek yogurt
- 2 tablespoons fresh key lime juice (or regular lime juice)
- 1 tablespoon shredded unsweetened coconut
- 1 teaspoon lime zest
- 1 teaspoon honey or maple syrup (optional)
- 4 ice cubes (if needed for thickness)
Instructions
- Place the frozen pineapple, coconut milk, Greek yogurt, lime juice, shredded coconut, and sweetener (if using) into a blender.
- Blend on high speed until completely smooth. Stop and scrape down the sides if necessary.
- Add ice cubes if the mixture is too thin and blend again until desired consistency is reached.
- Pour into a glass and sprinkle with a little extra lime zest or coconut flakes before serving.
Notes
- Use full-fat coconut milk for a richer texture.
- If you do not have key limes, use regular limes, but adjust the amount to taste.
- For a thicker smoothie, use less coconut milk.
