Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh key lime juice (or regular lime juice)
  • 1 tablespoon shredded unsweetened coconut
  • 1 teaspoon lime zest
  • 1 teaspoon honey or maple syrup (optional)
  • 4 ice cubes (if needed for thickness)

Instructions

  1. Place the frozen pineapple, coconut milk, Greek yogurt, lime juice, shredded coconut, and sweetener (if using) into a blender.
  2. Blend on high speed until completely smooth. Stop and scrape down the sides if necessary.
  3. Add ice cubes if the mixture is too thin and blend again until desired consistency is reached.
