Ingredients

  • 1 (5 ounce) box vanilla wafer cookies
  • 6 to 8 ripe bananas, sliced
  • 3 cups whole milk
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Arrange a layer of vanilla wafers in the bottom of a 9×13 inch baking dish.
  3. Top with a layer of sliced bananas.
  4. In a medium saucepan, whisk together milk, sugar, flour, egg yolks, butter, vanilla extract, and salt.
  5. Cook over medium heat, stirring constantly, until the pudding thickens, about 10-15 minutes. Do not boil.
  6. Pour half of the hot pudding over the bananas and wafers.
  7. Repeat layers of wafers and bananas.
  8. Pour remaining pudding over the top.
  9. Bake for 15-20 minutes, or until lightly golden and bubbly.
  10. Let cool completely before serving.

Notes

  • For best results, use ripe but not overripe bananas.
  • You can substitute a box of instant vanilla pudding mix for a quicker version. Follow package directions for pudding preparation.
