A classic Southern dessert featuring layers of vanilla wafers, sliced bananas, and creamy vanilla pudding.

- 1 (5 ounce) box vanilla wafer cookies
- 6 to 8 ripe bananas, sliced
- 3 cups whole milk
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange a layer of vanilla wafers in the bottom of a 9×13 inch baking dish.
- Top with a layer of sliced bananas.
- In a medium saucepan, whisk together milk, sugar, flour, egg yolks, butter, vanilla extract, and salt.
- Cook over medium heat, stirring constantly, until the pudding thickens, about 10-15 minutes. Do not boil.
- Pour half of the hot pudding over the bananas and wafers.
- Repeat layers of wafers and bananas.
- Pour remaining pudding over the top.
- Bake for 15-20 minutes, or until lightly golden and bubbly.
- Let cool completely before serving.
Notes
- For best results, use ripe but not overripe bananas.
- You can substitute a box of instant vanilla pudding mix for a quicker version. Follow package directions for pudding preparation.
- Chill for several hours before serving for the best texture and flavor.
