Ingredients

- 2 lbs potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tbsp mustard
- 1/4 cup chopped onions
- 2 hard-boiled eggs, chopped
- 1/4 cup chopped celery
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp vinegar
- 1 tsp sugar
Instructions
- Boil potatoes until tender, then drain and cool.
- Mix mayonnaise, mustard, vinegar, sugar, salt, and pepper in a bowl.
- Add potatoes, onions, celery, and eggs to the dressing.
- Stir gently until well combined.
- Refrigerate for at least 1 hour before serving.
Notes
- For extra flavor, add chopped pickles or bacon.
- Adjust seasoning to taste.
