Description
A hearty and creamy beef stroganoff with tender strips of beef, mushrooms, and a rich sour cream sauce, served over egg noodles.

- 1 lb beef sirloin, thinly sliced
- 8 oz mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 cup sour cream
- 2 tbsp flour
- Salt and pepper to taste
- 12 oz egg noodles, cooked
- Chopped parsley for garnish
Instructions
- Heat butter and olive oil in a large skillet over medium-high heat.
- Add beef slices and cook until browned. Remove and set aside.
- In the same skillet, sauté onions and mushrooms until softened.
- Add garlic and cook for 1 minute.
- Stir in flour and cook for another minute.
- Slowly pour in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
- Return beef to the skillet and cook for 5 minutes.
- Stir in sour cream and heat through without boiling.
- Season with salt and pepper.
- Serve over cooked egg noodles, garnished with parsley.

- Use full-fat sour cream for a richer sauce.
- Slice beef against the grain for tenderness.
- Replace beef with chicken or mushrooms for variations.
