Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/4 cup milk
  • 1/2 cup packed brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and 1/2 teaspoon cinnamon.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Stir in mashed bananas and milk until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. In a small bowl, combine brown sugar and the remaining 1/2 teaspoon cinnamon.
  8. Pour half of the banana bread batter into the prepared loaf pan.
  9. Sprinkle half of the cinnamon-sugar mixture over the batter.
  10. Pour the remaining batter over the cinnamon-sugar layer.
  11. Sprinkle the remaining cinnamon-sugar mixture over the top.
  12. Gently swirl the cinnamon-sugar into the batter with a knife or skewer.
  13. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  14. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure bananas are very ripe for the best flavor and moisture.
  • For a richer swirl, you can add a tablespoon of melted butter to the cinnamon-sugar mixture.
