- For the Icing:
- 4 ounces cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture onto the bottom of the prepared pan.
- Bake crust for 8-10 minutes. Remove from oven and let cool.
- In a large bowl, beat softened cream cheese and 1 1/4 cups sugar until smooth.
- Beat in flour, cinnamon, nutmeg, and cloves.
- Add eggs one at a time, beating well after each addition.
- Stir in sour cream and vanilla extract.
- Pour filling over cooled crust.
- Bake for 50-60 minutes, or until the center is almost set.
- Turn off oven and leave cheesecake in oven with door slightly ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Refrigerate for at least 4 hours, or preferably overnight.
- For the icing, beat softened cream cheese and butter until smooth.
- Beat in powdered sugar, milk, and vanilla extract until smooth.
- Spread icing over cooled cheesecake before serving.
