Ingredients

  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the diced apples.
  5. Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C).
  6. Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown and cooked through.
  7. Remove the fritters with a slotted spoon and drain on paper towels.
  8. Dust generously with powdered sugar while still warm.
