- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced apples.
- Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C).
- Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown and cooked through.
- Remove the fritters with a slotted spoon and drain on paper towels.
- Dust generously with powdered sugar while still warm.
