- 1 (4-rib) standing beef rib roast (about 8 pounds)
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 2 tablespoons olive oil
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 6 cloves garlic, smashed
Instructions
- Preheat oven to 450°F (230°C).
- Pat the roast dry with paper towels.
- Rub the roast all over with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the roast on all sides until deeply browned.
- Add rosemary, thyme, and garlic to the skillet around the roast.
- Transfer the skillet to the preheated oven.
- Roast for 15 minutes.
- Reduce oven temperature to 325°F (160°C).
- Continue roasting until a meat thermometer inserted into the thickest part of the roast registers 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium, about 1.5 to 2 hours.
- Remove roast from oven and tent loosely with foil.
- Let the roast rest for 20-30 minutes before carving.
- Carve the roast into slices against the grain.
