  • 6 cloves garlic, smashed

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Pat the roast dry with paper towels.
  3. Rub the roast all over with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat.
  5. Sear the roast on all sides until deeply browned.
  6. Add rosemary, thyme, and garlic to the skillet around the roast.

  12. Let the roast rest for 20-30 minutes before carving.
  13. Carve the roast into slices against the grain.
