Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water
  • 1 cup fresh raspberries
  • 1/4 cup powdered sugar
  • 8 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Carefully stir in the hot water until the batter is smooth.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. While the cakes cool, prepare the raspberry filling by mashing the raspberries with powdered sugar.
  10. Prepare the ganache by heating the heavy cream until simmering. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes. Whisk until smooth.
  11. Once the cakes are completely cool, place one cake layer on a serving plate. Spread the raspberry filling evenly over the top.
  12. Place the second cake layer on top of the raspberry filling.
  13. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  14. Let the ganache set before slicing and serving.
