- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup packed brown sugar
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- In a medium bowl, whisk together the oats, flour, baking soda, and salt.
- In a separate large bowl, mix the melted butter, brown sugar, and honey or maple syrup until combined.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the dried cranberries, sliced almonds, and chocolate chips.
- Press the mixture evenly into the prepared baking pan.
- Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
- Let the bars cool completely in the pan on a wire rack before lifting out using the parchment overhang.
- Cut into 12 bars.
Notes
- For a firmer bar, chill the mixture for 15 minutes before pressing it into the pan.
- You can substitute walnuts or pecans for the almonds if you prefer.
- Store leftovers in an airtight container at room temperature for up to one week.
